The Saint-Véran appellation lies to the south of the Mâconnais region, at the crossroads of three gastronomic regions: Burgundy, Beaujolais and Bresse. This young AOP was created in 1971. Clos de Chevigne was founded in 1990, nestling at the foot of the Roche de Solutré in southern Burgundy in the commune of Prissé. |
Soil composition |
Stony scree and clay-limestone Jurassic soils. |
Vinification |
Traditional vinification: Direct pressing on receipt of the grapes in a pneumatic press, settling and cold storage for 48 hours. Fermentation in vats at a low temperature of 16-20 °C to preserve the aromas. |
Ageing |
Aged on lees in vats for 8 to 10 months with regular stirring of the lees. |
Pairing |
Goes well with fine shellfish (gambas, lobster, langoustines, etc.), cooked foie gras and white meats in cream sauce (veal, poultry). Sushi goes perfectly with its minerality. Ideal with goat's cheese. |
