	Perlage Fine and persistent.
	Colour Deep straw yellow.
	Bouquet Ripe, marked hints of yeast, overripe exotic fruit, almost honeyed notes. Broad and enveloping, with roasted notes in the background.
	Flavour Soft and broad, sensations of bread crust, then tropical fruit and mineral notes.

Vinification	All the batches that make up this wine are harvested and vinified separately. After an extremely soft pressing and static clarification, the must is fermented in second-passage barriques, where the malolactic fermentation takes place completely.
Ageing	The wine is left on the lees until the addition of liqueur de tirage, with frequent bâtonnages. After about 8 months, the wine is assembled, which is re-fermented using the classic Champenoise method, i.e. the re-fermentation in the bottle. After 30 months on the lees, the wine is disgorged.
