Vinification All the batches that make up this wine are harvested and vinified separately. After an extremely soft pressing and static clarification, the must is fermented in second-passage barriques, where the malolactic fermentation takes place completely.
Ageing The wine is left on the lees until the addition of liqueur de tirage, with frequent bâtonnages. After about 8 months, the wine is assembled, which is re-fermented using the classic Champenoise method, i.e. the re-fermentation in the bottle. After 30 months on the lees, the wine is disgorged.
