Vinification |
Complete destemming of the grapes. Fermentation only with indigenous yeasts. Traditional fermentation with the semi-submerged cap with punching down and pumping over. Controlled fermentation temperature of 29°C on indigenous yeasts. Total maceration time: 18-30 days. Malolactic fermentation in concrete tanks in the spring following the harvest. |
Ageing |
15-18 months in 20-30-50-80-100 hl Slavonian oak casks. |
Pairing |
It pairs well with appetizers of ham, sausages, raw meat and veal with tuna sauce. Moreover, it perfectly pairs with main courses of red meat, grilled meats, and hard or aged cheeses. |
