Harvest |
The manually harvested grapes are gently pressed after a short maceration phase. |
Vinification |
The grape must is clarified from cloudy substances by slowly settling them. The must is then fermented in 500 l wooden barrels (1/3 new wood). |
Ageing |
Malolactic fermentation is followed by maturation on the coarse lees for 12 months in the large wooden barrel. During this phase, the yeasts are kept in suspension by stirring at regular intervals. The wine is then stored for a year in the steel tank and then bottled. In the bottle, the Chardonnay ages for a further 3 months. |

The Chardonnay Riserva perfectly accompanies savoury first courses, fish variations and white meat. |
