"For hundreds of years, the name Torre d'Orti on the topographical maps of San Martino Buonalbergo has indicated a specific part of the mountain that overlooks the village of Marcellise".

Being the ridge with the best view, it was chosen by the lords who built the nearby Montorio Castle to be the site of the watchtower, a privileged point from which to monitor the enemy's movements.

A few centuries later, it was used by the locals for various crops; evidence of the period can still be found in the terraces that were carved out to cultivate olives, vines and wheat.

Hence the name of this picturesque location, which in more recent times after being acquired by the Piona family was converted into a vineyard for the production of Valpolicella wines.

Harvest The grapes are put in a wooden tray and left to dry in a small hut at 350m above sea level where the optimum climatic conditions allow a natural drying to ensue.
Fermentation 15-20 days.
Wine making Then the traditional fermentation is made with mixed method of remontage and delastage. The fermentation due to the low temperature and high sugar content continues for 15-20 days. After several days’ maceration on the skins the wine is then drawn off and put into barriques. Only new French oak barriques are used for this Amarone Torre d’Orti. The ageing continues for 12 months and then the wine is blended in large botte, in which it is kept until bottling.
