Fior di Sale is what remains at the bottom of the basins when the sea water evaporates. Its greyish colour is due to the minerals it contains, which give it its typical savoury flavour. The soil of the Conegliano Valdobbiadene hills is also rich in minerals and, as with Fior di Sale, these minerals give the Brut its aromas, scents and savoury flavour.
