"I bought the Diesel Farm in the 1994; it was for my father, really, although he is no longer alive to enjoy it. We produce wine on the farm – and olive oil also now. Each vine only produces around two or three brunches of grapes, from which we make 300 bottles of pure genius".

Harvest Grapes are hand-picked into perforated crates in late September.
Wine making Grape sorting, shelling for Merlot, destemming and pressing for Cabernet. Maceration: cold soaking for Merlot, direct fermentation for Cabernet. Fermentation: controlled temperature, selected indigenous yeasts, pumping over at the beginning and punching down at the end, static draining.
