It all starts in the vineyard with rigorous manual work throughout the year. We take great care with the vines, starting with pruning. This is a decisive step in the management of the vine. We prune in simple Guyot and in Cordon de Royat. The shoots are then pulled and crushed in order to attach the rods.
As budburst approaches and the first leaves come out, disbudding allows us to regulate the harvest. We remove the counter-buds by hand and clean the cordon and the cane in order to have aerated vines, limiting the pressure of diseases and favouring a better maturity of the grapes.
