Terre Cevico's story is linked to the century tradition of cooperatives in Emilia-Romagna. In fact, in 1913, in Nonatola, near Modena, the first cooperative winery in Emilia-Romagna was founded to unite small wine growers and guarantee them dignity and respect. Today, the cooperative movement in Romagna, of which Terre Cevico has been part since 1963, represents a virtuous system that creates income for all members with fairness and responsibility.

Increasing the collective value of terroirs and production and providing the market with quality wines at the right price. Quality is the main feature in all company wines, whether DOCG, DOC, IGT or table wines, raw materials, processing, soil selection, and technical resources. For this reason, the company knows that quality is the only feature to successfully compete in the Italian and European wine markets and satisfy its customers.

Origin The Vermentino grapes are carefully selected from low-yielding vineyards in the Province of Lecce, in southern Apulia

Harvest By hand, late September.
Wine making After a delicate destemming, the grapes are not crushed but left to macerate on their skins for about 12 hours at 4°C to increase extraction of the delicate aromas. The grapes are then gently pressed, and the clarified must is placed in stainless steel fermentation tanks. Fermentation is carried out using selected yeasts at a controlled temperature of 15°C and lasts about 10 days.
Aging The wines are left to rest on their lees in stainless steel containers for 3 months at a controlled temperature of 10°C.
