Sangiovese wines are the result of a vinification process that involves the selection of the grapes based on their degree of ripeness by densimetric analysis, separating the grapes into various grades of quality according to their density in a vat full of must. The best grapes are destined for the production of top-quality wines.

釀造	Skin contact at 10°C for 24 hours. Alcoholic fermentation with selected yeast strain for 7 days at 25°C. The skins are then soft-pressed off and the wine is drained into a tank to complete alcoholic fermentation. The wine is racked off fermentation lees before malolactic fermentation.
