Primosic Pinot Grigio Skin 2020

An 'orange wine' with an intense coppery colour, obtained from a week of fermentation in open vats, in contact with the skins of ripe Pinot Grigio grapes. Powerful and complex, rich and mineral, not white by nature. Not to be confused with a rosé!

The intense coppery colour is given by the fermentation on the skins of Pinot Grigio.

The nose evokes violets, raspberries and red fruits.

The palate is powerful, complex, with warm, red fruit notes; it closes rich and mineral.

Pairing

Fish soups and broths, especially in red; spicy, spicy or sweet and sour dishes typical of Asian cuisine; fantastic with grilled octopus on red pepper sauce or a classic pasta all'amatriciana.

收成	The ripe grapes are harvested manually in boxes.
釀造	The ripe grapes are destemmed and placed in open vats, where fermentation begins by indigenous yeasts, in the absence of sulphur dioxide, with gentle punching down. The must remains in contact with the skins for 6-7 days. The wine must is then separated from the skins and placed in 600-litre Slavonian oak casks to continue alcoholic and malolactic fermentation.
陳年	Maturation in wood for several months follows. After bottling, which takes place without sterile filtration, the wine is refined in the bottle for several months.
