A soft pressing is carried out where the first must is extracted. The must obtained ferments in temperature-controlled stainless steel tanks at 16°C until it reaches about 6° alcohol. Fermentation is blocked by a filtering and refrigeration process. Sparkling is obtained in pressurized stainless steel tanks. |
