A soft pressing is carried out where only the first must is extracted. The must thus obtained begins fermentation at a controlled temperature of 16°C in stainless steel tanks until it reaches approximately 6 degrees alcohol, The fermentation is stopped followed by filtration and refrigeration. The second fermentation takes place in an autoclave. |
