Soft pressing of the whole grapes is followed by cold static decantation of the must, which is then fermented in stainless steel at 16 degrees with selected yeasts for about 10 days. |

Refinement on the lees lasts until the following spring, then the sparkling wine base is prepared for bottling and selected yeasts are added once again for frothing, according to the traditional classic method, in compliance with the Trento Doc regulations. Siris matures on the lees for 36 months, thus acquiring structure, elegance and complexity. |
