Domaine Vaudoisey Creusefond Pommard 2018
Old school wine. The fermentations take place, thanks to the particularly sought after yeasts, in old wooden vats. Maturations are quite long, as are macerations. Very little new wood is used, purchased in the minimum quantities only to replace the disused barrels. No intervention in the cellar in any way except with a little 'sulfur. The result is a postcard from the old Burgundy: wines all in subtlety, full of perfume, even a little austere in their youth, certainly long-lived, and which in addition have the merit almost all of telling little known vineyards.
