The Cuvée Novecento is a sparkling wine of extraordinary precision. Chalk, white flowers, mint, slate and lemon peel race out of the glass. Despite its age, it has remarkable freshness, with hints of graphite-infused minerality, which is a magnificently pure finish.

收成	By hand. Chardonnay grapes on the 3rd of September, while Pinot Noir on the 10th of October. The two grapes are kept separate.
釀造	First and second fermentation with indigenous natural yeast.
陳年	After the first fermentation, the wines are left to age until May after the harvest, then blended and bottled for the second fermentation.
Sulphites	Contains sulphites
