收成	Early September.
釀造	Grapes are carefully selected, which are brought to the winery and initially cooled and then destemmed. Only the first grapes are fermented in steel vats for about 2 months until an alcohol level of about 5.5% is obtained. Fermentation is interrupted by drastically reducing the temperature. Filtration is only carried out before the lees ageing.
陳年	Second fermentation at a low temperature for about 4 months to reach an alcohol content of 7%. Ageing in temperature-controlled cellars for the entire ageing period. Manual remuage and disgorgement are performed at a low temperature.
