Fermentation occurs at a controlled temperature of 20/22°C, preceded by pre-fermentation cryo-maceration using the best technologies to respect tradition. After racking, the wine is left to decant in stainless steel vats. It then undergoes malolactic fermentation in wood. Finally, it is aged in stainless steel with the help of a state-of-the-art micro-oxygenation plant. |
