The ES is in Freud's instincts and unbridled passion, the same thing with which it was produced this wine to no conditions, no rules, beyond space and time, logic and morality. The ES is subject to a single principle: "PLEASURE".

A wide range of blackberry preserves, blueberries, wilted rose, dark chocolate, liquorice, moist earth and mineral-rubber hints.

收成	By hand, at the end of August. Grapes are slightly dried on the vine followed by a careful selection of the best bunches. The grapes are brought to the winery in refrigerated trucks.
酿造	Once in the winery, grapes are sorted, destemmed and softly crushed. Maceration occurs in a 70-hl stainless steel vat with a skin-must contact for two to three weeks. The marc is temperature-controlled with 2 daily délestag. The marc is pressed by using a vertical hydraulic press with a stainless steel cage.
陈年	After racking, the wine is put into 50% new and 50% second passage French oak barriques with daily bâtonnage until the first racking. After about 9 months of ageing in wood, the wine is bottled without the aid of clarifying agents and tartaric precipitation. It finally refines about 9 months before being marketed.
