Fongaro Etichetta Viola Lessini Durello Metodo Classico Riserva Brut 2017
100% Durella grapes, a native and very ancient variety from the Veneto region, extremely vigorous, with particularly thick and leathery skin, cultivated on soils rich in minerality. Typical of the Lessini Mountains area, on the hills between the provinces of Vicenza and Verona, this grape variety yields wines with significant acidity due to their high malic acid content that is well suited to sparkling winemaking according to the Classic Method.

Olfactory impact of great intensity where notes of bread crust, peanut butter and hazelnut dominate. Then, floral notes arrive to enrich the bouquet, accompanied by sensations of exotic fruit, yellow grapefruit and lemon apple. Pleasant nuances of vanilla and sweet tobacco further enhance the wine's aromatic framework.

味道

The palate is dry, taut, soft, and velvety. The elegant freshness gives way to bursting notes of toast and exotic fruit that provide a harmonious and intense taste. Elegant and well-balanced finish.

Pairing

Highly appreciated as an aperitif accompanied by a 24/30 month Grana Padano cheese. It goes well with a dish of gnocchi with porcini mushroom sauce, a mushroom stew or a rabbit 'alla cacciatora'.

收成 By hand, with crates between late August and early October. The crates are then placed in the cold cellar, cooling the grapes before pressing.
生产技术 Soft pressing at a temperature of 10-12°C. The first fermentation occurs in thermo-controlled tanks at a temperature of around 15-18°C. The fermentation occurs in tanks for 20 days on average. The second fermentation occurs with its yeasts in April.
陈年 On its yeasts in the bottle, not less than 36 months. Remuage sûr pupitres occurs once maturation is complete. The bottles are taken from the stacks and inserted by the neck into pupitres, they are rotated by hand every day for about 30 days, after which disgorgement is carried out.
