Traditional vinification. The grapes are pressed in pneumatic presses as soon as they arrive in the winery. Alcoholic fermentation takes place in oak barrels, 20% of which are new. |

The wine is then matured for a further 12 months in oak barrels with regular stirring of the lees to add depth and complexity. |

All in all, this fresh wine gives great pleasure both as an aperitif and with elaborate dishes. Goes well with fine, tender dishes: pan-fried river fish pan-fried river fish, sea fish in a white sauce, hot shellfish, fine poultry in a creamy sauce (such as a blanquette) and frogs' legs. It can also be drunk as an aperitif. Hard cheeses: Comté, Beaufort, Emmental, etc. |
