The grapes are pressed daily to extract the colour, tannins and aromas from the grape skins. After 19 days in the tank, alcoholic fermentation is complete. The free wine is drained using a gravity system while the marc is slowly and gently pressed. |

16-18 months in French oak barrels (60% new oak and 40% used barrels) that have been selected for their fine grain and moderate toasting. |
