These are clayey silts in colluvium on an alteration of pure silts very calcareous and rich in silica which confer to the wines a beautiful minerality. |

Hand-picked with sorting on the vine and on the table if necessary. |

Slow pressing. Settling for 6 to 18 hours. Fermentation in tanks with indigenous yeasts, without SO2. |

Aged on lees for 30 months with 2g of SO2 at racking and 2g after filtration. Light filtration. |
