100% in thermoregulated stainless steel tanks. No use of added sulphites, settling takes place without enzymes, tanine or charcoal, without chaptalisation. Spontaneous alcoholic fermentation with indigenous yeasts occurs at 17°C. It then follows a spontaneous malolactic fermentation with indigenous yeasts at 20°C. Once ready, the wines are not fined, i.e. clarified, before bottling, without acidification or deacidification. |
