Bourgeois Diaz Champagne BD'N Blanc de Noirs Brut Nature
The Domaine for four generations operates Bourgeois-Diaz over an area of seven hectares, divided into thirty plots distributed between Crouttes sur Marne and the surrounding municipalities. The vineyards rest on limestone-clay soils, mostly south-west exposed. In the vineyard since 2010 we do not use herbicides and synthetic products since 2007; the work is since then in biodynamic conversion, in fact, currently only 4 hectares are certified organic. The harvest of the manual type with selection of only perfectly ripe grapes arrived in the cellar the juice is layer against using traditional presses, and the winemaking take place both in stainless steel tanks and in oak barrels depending on the year and types. The basic Cuvèe face a period of 24 months of "rest" in the basement while the Cuvée 60 months, these are generally inclusive of all three grape varieties from the Domaine.
