酿造 |
After careful selection, the grapes undergo a soft pressing immediately after manual harvesting. The must thus obtained is left to decant and then fermented at a controlled temperature of 17 - 18° in steel vats. In spring, the base wine, with the addition of liqueur de tirage is bottled. The bottles are laid horizontally in large stacks in an environment with a constant temperature of 12-14°C, where they will remain for at least 18 months for the second fermentation. Next, the bottles undergo the riddling step to detach the lees sediment from the bottle walls and bring it up to the cork of the inverted bottle. This is followed by the disgorgement phase, the bottles are topped up by adding a small dose of 'liqueur d' expédition'. The sparkling wine is then corked and left to rest for several months before being sold. |
