In the reconstruction of the plants destroyed by the peronospora and by the phylloxera between the end of the 800 and the beginning of the 20th century, the most productive vines were favored, a choice that brought the yields of this region among the highest in the world. In 2009, production was about 6,952,000 hl, but quality wines come mainly from hilly areas. The viticulture of the Piacentini Hills draws origins and traditions from Piedmont and Oltrepò Pavese, and is characterized by Barbera and Croatina, from which the most representative red wine of the area is obtained, the Gutturnio DOC. Among the whites are the Ortrugo, made from the homonymous vine, and pleasant wines, also sparkling and sparkling, based on Malvasia.
On the Colli di Parma are found these same vines, accompanied by many international, but it is above all the aromatic scent of aromatic Malvasia di Candia to express themselves on levels of great pleasure.
In Reggio Emilia and in the province of Modena there is the wine-symbol of Emilia's viticulture, the Lambrusco, with the fragrant freshness of the different varieties, which in the Reggiano showcases more compact colors and a slightly more defined structure.
On the Colli Bolognesi has grown a white grape variety, historical and with considerable potential quality, the pignoletto from which you get the DOCG Colli Bolognesi Pignoletto Classico, in addition to some international red berry that are giving excellent results especially in some particularly suitable area .
Unlike Emilia, where vivacious and sparkling wines are preferred, Romagna has an enological panorama characterized by still and more structured wines. The most cultivated red grape variety is the Sangiovese, which above all in some reserves is giving great satisfaction. Among the white berried ones, the most important are the Trebbiano romagnolo and the albana, an indigenous vine that has been appreciated for centuries, from which the excellent Passito is obtained, which is part of the DOCG Albana di Romagna.

Soil and climate
The climate is characterized by hot and sultry summers and harsh winters with abundant rainfall and frequent days of fog and frost. Along the Adriatic coast the climate is milder; heavy rains and snow fall on the mountains, while in the plain it snows but the snow melts immediately. Emilia Romagna is a predominantly flat region, its territory for almost 50% consists, in fact, from the Po Valley, while in the West there is the Ligurian Apennines and Tosco Emiliano. The only important river is the Po.
History
In the 2nd century BC in honor of the Roman consul Marco Emilio Lepido he built a road that connected Rimini to Piacenza and was called Aemilia. From this road the name was given to the Region. In the VI century AD the Romans lost this territory, which was divided between the Lombards and the Byzantines, calling these lands Longobardia and Romania respectively. The area of ​​the current Romagna was of Byzantine rule. With the unification of Italy, the original name of Emilia was given back to the Region. Only in 1947 was the current name of Emilia Romagna assigned.
Typical products
The only famous wine of the region is Lambrusco, the sparkling red of the Modena area, above all of Sorbara. The reputation of Emilia Romagna as a wine producer is constantly on the rise. The hills around Bologna, the Colli Bolognesi, now give some respectable cabernet, merlot and sauvignon blanc. The Albana Romagna was the first wine to win the DOCG in 1986. Obtained from the homonymous vine, albana can be more or less sweet, but in reality the only interesting versions come from the hills around Forlì. The red of the area is more reliable than albana: the Sangiovese di Romagna. This wine can be weakened by the intensive cultivation of the grapes, but also to be robust and quite sophisticated, so much so that some Sangiovese clones, highly appreciated by the demanding Tuscan producers, come from Romagna.
Typical dishes
The great development of the cured meats and hams industry is dominated by Parma ham and Modena ham, both PDOs like Zibello culatello, Piacenza salami, coppa and pancetta. Equally tasty are the bow of culatello and the fiocchetto, obtained from the pork leg, as well as the Langhirano raw ham, the Coppa di Parma, the pancetta canusina, the mortadella di Bologna PGI. An essential element common to Emilia and Romagna is the egg pasta, or rather the pastry, which the housewives prepare strictly by hand, working for a long time the dough of flour and eggs. It is then reduced to tagliatelle, tagliolini, squares, pappardelle, lasagne and maltagliati, depending on the size, and then seasoned with different sauces, or used for tasty and renowned stuffed pasta. Among the desserts of particular originality are the amaretti di San Geminiano, typical of Modena and softer than those of Piedmont, the bolognese donut, the ricotta tart, rather firm fruit or custard, the jam and tortellini of jam, sweets typical of carnival days.
