Harvest |
After hand-picking, the grapes are sorted on a vibrating table to remove dried grapes, leaf residues and stems. They then move to another sorting table to remove any grapes that are unripe, damaged or show signs of rotting. |
Vinification |
Fermentation starts slowly, using native yeasts, and continues for between 10 and 15 days. |
Ageing |
The resulting wine is then aged in barrels for 2 years. |
Pairing |
It pairs well with loin of lamb with mild herbs. |
