Vinification |
After careful selection in the old vineyards, the Merlot grapes are macerated in truncated conical wooden vats for 20 days, alternating manual punching-down, pumping-over and delestage. This is followed by racking and traditional pressing of the marc. |
Ageing |
In barriques. After about 18 months, the wine is bottled and aged for another 2 years. |
Pairing |
A perfect pairing with flavours such as game, grilled red meat and aged hard cheeses. |
