||The Merlot grapes are brought to the cellar after meticulous selection in our old vineyards. Maceration is in open-top truncated cone wooden vats and large barrels for 20 days, where manual punch-downs, on the first two days, are alternated with rack and returns and pump-overs. This is followed by devatting. The pomace is then pressed in the traditional manner. The wine is allowed to settle in the vat for one day, so that the larger solid particles fall to the bottom, and it is then racked into new barriques. Malolactic fermentation is completed in barrique.
||Throughout 18 months of wood maturation, the wine is racked at intervals determined by the phases of the moon. It is then blended, after which it rests in large wood for two more months. After bottling, the wine ages for a further two years in glass before release.
||A wine that demands strong flavours, such as furred game, grilled red meat and mature hard cheeses.
