Amongst the 52 towns of the Moscato DOCG appellation, only 22 fall within the excellence of the 'Canelli' sub-zone, where the presence of this vine has been attested to since the 13th century. The grapes that can bear the appellation Moscato d'Asti D.O.C.G. Canelli come from vineyards that are located over 165 metres above sea level.

Harvest By hand, with 20 kg crates and selection in the vineyard of the healthiest and ripest grapes.
Vinification Soft pressing is followed by a slow fermentation in temperature-controlled autoclaves until an alcohol content of 5 degrees is reached. During this process, part of the carbon dioxide developed during fermentation remains 'trapped' in the wine, giving it its natural slight effervescence.
Ageing Before bottling, the wine undergoes micro-filtration to give it transparency and purity to interrupt any further yeast fermentation.
