He is surely the son of his land, this Valpolicella Classico Superiore with intense ruby, rich and deep. The traditional technique of Ripasso consists in the refermentation of a young Valpolicella on the still-impregnated pomace of sugar and yeast of dried grapes from which the famous Amarone is derived.
