Vinification | The Cocchi style, even before it is in the glass, can already be recognized in the winemaking: the pressing of the grapes and the fermentation of the different plots takes place separately for the two grape varieties in steel vats, without using wood. After a careful selection of the best small batches, these are cold-fermented without using any fining agents, and finally blended. |
Vieillissement | The slow maturation cycle on the lees of this special organic cuvée continued until the first disgorging of the batch which took 46 months. The wine is an extra brut. |
