Description
Omne dies is produced by the cellar of the Abbazia di Novacella, considered one of the oldest active in the world, whose production has been active since 1142 when it was ceded to the monks along with the surrounding vineyards by Reginbert of Sabiona. Over the centuries, the abbey was increasingly surrounded by an expanse of vineyards, from the valley floor to the steepest slopes that reach up to 900 meters. From the beginning of the 19th century to today, with secularization, the monastery lost some of its vineyards, however the farmers still deliver most of the grapes to the abbey. Located on the slopes of the Isarco Valley, archaeological finds demonstrate that vine cultivation has been a practice in the area for 2,500 years. The abbey's wines are distinguished by their high quality and longevity, typical of the monks' strict dedication to work and production criteria.
From the classic line there is also, the Abbazia di Novacella Omne Dies, derived from a blend of grapes approved by the production regulations "vigneti delle dolomiti IGT", grown in the typical gravelly, silty-sandy soil of the Bressanone Basin. All the white grape varieties are grown with a southern and south-west exposure, as the viticulture area is the northernmost in Italy and therefore the vines need the best exposure to ripen quality fruit. After a careful harvest and selection of the best grapes, the must is fermented and aged in stainless steel for 6 months at a controlled temperature of 17/19°C. This wine, with a longevity of up to 6 years, is fresh and fruity, and the term "omne dies" is translated from the Latin "all day," in fact it is very suitable for all moments of the day.
