Le Guaite di Noemi Valpolicella Superiore is a still red wine characterised by an intense and structured aromatic profile. Made from a blend of Corvina, Corvinone and Rondinella grapes, this Valpolicella Superiore displays a deep ruby colour with garnet highlights. On the nose, notes of red cherries, blackberries and plums emerge, enriched by hints of freshly cut grass, violet and blackcurrant. On the palate, it is smooth and enveloping, supported by a pleasant savouriness and excellent acidity. The flavours of ripe fruit intertwine with spicy nuances, offering a full and balanced sip.
Where it comes from
This wine originates in the Mezzane Valley, in the heart of the Verona region. The vineyards managed by Le Guaite di Noemi are cultivated according to the principles of organic and sustainable agriculture. The vines grow at an altitude between 450 and 500 metres, an ideal height to promote optimal ripening of the grapes. The basaltic soils, combined with formations of white and pink limestone rich in iron, give the wine structure and character. This particular hilly terroir is essential for ensuring freshness and remarkable longevity.
How it is produced
Production begins in mid-September with the harvest of the grapes, which undergo a month of drying in the fruit loft to concentrate the aromas. After crushing and destemming, the must undergoes cold maceration and fermentation at a controlled temperature. Once malolactic fermentation is complete, the wine matures for a period of 36-48 months in second-use French barrels. Ageing continues with a further rest of equal duration. This slow evolution allows the tannic structure to integrate perfectly, giving the wine profound elegance on the palate.
