Description
Still white wine from Etna DOC, 12% ABV, produced by Palmento Costanzo. Blend of Carricante and Catarratto Bianco Comune. 2021 vintage. A wine born on the slopes of the volcano, in Contrada Santo Spirito, Passopisciaro. Manual harvest in late September, soft pressing, and fermentation in stainless steel with selected indigenous yeasts. Aged for 4 months in stainless steel on the lees and 2 months in bottle. Fragrant bouquet with pronounced citrus and mineral notes with hints of Mediterranean scrub. Medium-intense straw yellow color. On the palate, it is agile, fresh, and savory, reflecting the minerality of the volcanic terroir.
