Description
What kind of wine is it
Domaine Pattes Loup Chablis 1er Cru Butteaux is an organic white wine that expresses the authentic character of its terroir. Made exclusively from Chardonnay grapes, it stands out for its fresh and elegant style. On the nose, it offers an exuberant and floral bouquet of remarkable intensity, while on the palate it reveals dense and rich fruit, balanced by lively saline notes that provide energy and structure. A brief decanting enhances the aromas before serving, making it ideal to accompany lean fish, delicate poultry and mature cheeses.
Where does it come from
This wine originates in Burgundy, in the north of France, within the renowned region of Chablis. Specifically, the grapes come from the Butteaux subzone, recognised as a Premier Cru, a term that identifies the most prized plots. The characteristics of these vineyards give the wine the mineral imprint typical of the great local whites. Domaine Pattes Loup manages the soils according to the strict principles of organic farming, promoting a sustainable approach to preserve the balance of the environment.
How is it produced
The winemaking follows a philosophy of minimal intervention to faithfully enhance the Chardonnay. The transformation of the must takes place through spontaneous fermentation triggered by indigenous yeasts, without any inoculation. To preserve the aromatic components and the tactile consistency of the fruit, the wine undergoes no filtration before bottling. This artisanal process guarantees a glass of great precision and authenticity, characterised by a pronounced gustatory energy.

My passion for the profession of winegrower, my curiosity and my desire to respect the environment and the health of my family and friends were determining factors in my decision. The organic cultivation of my vines became an obvious choice.
In 2004, I returned to the family estate of Bois d'Yver and took over 8 hectares which I converted to organic farming (ECOCERT). I then created my own estate, the "Pattes Loup" estate.
In 2009, I obtained my certification in Organic Agriculture. (Thomas Pico) Read more
