What kind of wine it is
Fiano di Avellino with Denomination of Controlled and Guaranteed Origin, crafted by Ciro Picariello, is a Campanian white wine with a straw-yellow colour, a pure expression of the Fiano grape. The bouquet is intense, characterised by delicate scents of white flowers that blend with notes of flint and peaty nuances. On the palate, it is fresh and structured, supported by a pleasant acidity that ensures its balance. This harmony gives it great versatility, making it ideal to accompany the entire meal, from first courses to fish dishes and cheeses, without the need for decanting, enhanced by maturation in steel.
Where it comes from
This white wine originates in Summonte, in the heart of the Fiano di Avellino area. The vineyards are trained using the Guyot and vertical trellis methods, with a planting density designed to favour optimal fruit concentration. The vines sink their roots into rocky and clayey soil, a pedological combination that gives the wine a distinct and recognisable mineral character. The soil and climate conditions of this specific area of Campania ensure a production focused on maximum stylistic precision and aromatic clarity.
How it is produced
The harvest takes place between mid and late October. After cooling the must for twenty-four hours, a slow temperature-controlled fermentation begins, lasting sixty days to preserve the aromatic integrity of the Fiano. Maturation continues in stainless steel tanks for ten months, during which frequent bâtonnage is carried out. This technical choice gives the wine greater fullness and depth of flavour, maintaining a linear and pure character without the use of barrels, ensuring absolute freshness and clarity.
