What kind of wine it is
The Sylvaner from Pacher Hof is a still white wine of great elegance, able to faithfully express the character of the eponymous grape variety within the Alto Adige Valle Isarco denomination. To the eye, it displays a bright, luminous yellow colour, while the nose opens with clear aromas of freshly cut hay. On the palate, it reveals a pronounced minerality balanced by a pleasant freshness, with notes of gooseberry and peach accompanying the sip towards a clean and smooth finish, following fermentation in steel and maturation in large wooden barrels.
Where it comes from
The grapes come from the vineyards of Novacella, located above Bressanone, where the Pacher Hof estate cultivates vines between 620 and 900 metres above sea level. The moraine soils, composed of sandy-silty gravel, give the wine a distinctive mineral imprint. The area's warm microclimate, tempered by a marked temperature range between day and night, allows for ideal aromatic ripening, ensuring balance and definition in every sip.
How it is produced
The vinification process begins at the end of September with the harvest of Guyot-trained bunches, with low yields to preserve quality. The slow fermentation takes place at a controlled temperature in steel tanks, thus maintaining the original fragrance of the aromas. Maturation continues for about six months on the fine lees, divided between steel containers and large wooden barrels. This practice gives the wine stability and a soft structure, without altering the lively aromatic character typical of the grape variety.

The Sylvaner 2025 originates from the historic Pacherhof Estate, whose roots in Novacella, just above Bressanone, date back to 1142. Managed by the Huber family, the estate sees winemaker Andreas Huber cultivating 8 hectares of excellent white grape varieties, continuing a centuries-old winemaking tradition.
