| Wine making | Individual grape plots are cooled, hand-selected and then whole cluster pressed to separate the best free juice. In addition, light pressing. After minimal decantation, the juices are left to ferment naturally in 50% old French oak and 50% stainless steel. The oak consists of barriques, hogsheads and puncheons. The fermentation temperature is between 18 °C and 22 °C and the lees are stirred weekly from later in the fermentation until dry. The separate parcels are matured on the lees in casks and tanks for 10 months and a part of each batch undergoes malolactic conversion. |
