Wine making | Soft pressing of the whole bunches takes place in an inert atmosphere to reduce oxidative phenomena. The first fermentation is conducted in temperature-controlled stainless steel tanks. The method used for the second fermentation is the classic Trento DOC method. Maturation on the yeasts lasts more than 24 months to keep the fragrance of the original wine intact. The dosage is minimal to avoid altering the characteristics conferred naturally by favourable environmental factors, the second fermentation and particularly careful craftsmanship. |
