What kind of wine it is
Etna Bianco Sul Vulcano by Donnafugata is a still wine that expresses the authentic soul of Carricante grapes. Produced in the Etna Bianco territory, it presents a straw-yellow colour with subtle golden reflections. The bouquet reveals mineral notes of flint, enriched by hints of bergamot and mandarin, softly fading towards white flowers, honey and vanilla. On the palate, it is enveloping and vibrant, dominated by a marked sapidity and a persistent finish. These structural qualities create an ideal pairing with shellfish and fish dishes, vegetarian first courses with porcini mushrooms or delicately cooked white meats.
Where it comes from
This wine draws its strength from eastern Sicily, coming to life on the northern slopes of Mount Etna, between the municipalities of Randazzo and Castiglione di Sicilia. The vines grow at an altitude of over seven hundred metres in a climate with limited rainfall, characterised by cool summers and strong temperature variations between day and night. The authentic richness of the glass derives from the sandy-textured lava soil, which is deep and rich in precious organic elements. This unique environment encourages extensive root development, giving the wine the distinct minerality and intense energy of the volcano on which it is born.
How it is produced
The Carricante grapes, grown using bush-training or vertical trellis systems, are harvested at the end of September. The vinification process begins with fermentation in stainless steel at a controlled temperature to preserve the primary aromas. The wine then matures mainly in the same tanks, while a small portion rests in second- and third-use barrels, gaining depth without masking the fruit's identity. Careful bottle ageing completes the production cycle, perfectly harmonising the palate. The result is a rounded and elegant drink, defined by a vibrant freshness that pays homage to the mountain altitudes.
