What kind of wine it is
Alta Mora Etna Bianco is a dry white Sicilian wine made exclusively from Carricante grapes. As an expression of the renowned Etna Bianco denomination, it stands out for its taut and elegant profile, characterised by vibrant freshness and a clear mineral texture. On the nose, it reveals a complex bouquet where white flowers, Sicilian citrus fruits such as lemon and orange, apple, and pronounced notes of flint and volcanic rock coexist. On the palate, it is savoury and persistent, enriched by hints of hay and aromatic herbs that lead towards a saline and vertical finish.
Where it comes from
The grapes are grown on the slopes of the volcano between Milo and Castiglione di Sicilia, at altitudes between 500 and 600 metres. The vineyards, often supported by typical dry-stone walls, sink their roots into volcanic soils shaped by the 1879 lava flow. This terrain, composed of black sands and ash, imparts the Carricante with its typical rigour. The vines, trained on trellises in various districts, benefit from the high-altitude climate that enhances the aromatic quality of the fruit, maintaining low yields to promote a strong territorial identity.
How it is produced
After manual harvesting, vinification begins with a gentle pressing and static decantation of the must. Fermentation takes place in steel tanks thanks to the action of indigenous yeasts. Once malolactic fermentation is complete, the wine rests on the fine lees for four months, finishing its maturation in the bottle within an underground cellar. This process enhances its natural gastronomic vocation: served chilled, it is ideal for accompanying raw seafood, shellfish, seafood risottos and sushi, and also proves excellent with vegetarian dishes and traditional Sicilian couscous.
