The Animale Celeste Sauvignon from the Santa Barbara winery is a still white wine that masterfully interprets the characteristics of Sauvignon Blanc grown in the Marche region. Classified as a prestigious Indicazione Geografica Tipica, this wine stands out for its fresh and balanced aromatic profile, supported by good structure and enviable persistence. In the glass, it shines with a straw yellow colour with greenish highlights, while the bouquet releases citrus and ripe peach notes, enriched by delicate hints of spring flowers. Where it comes from
The grapes grow in the hinterland of Ancona, specifically in the municipality of Barbara, in a hilly landscape between the valleys of the Misa and Nevola rivers. The vineyards, situated at around 350 metres above sea level, benefit from an optimal north-west exposure, which encourages slow ripening and a complex aromatic spectrum. The soil consists of medium-textured land with a tendency towards limestone, a geological matrix that gives the wine verticality and a distinct mineral trace. The climate moderated by the Adriatic Sea plays a fundamental role in maintaining lively acidity and overall harmony, maximising the expressiveness of the grape variety.
How it is produced
The creation of the wine begins with a manual harvest of the grapes, carried out carefully to preserve the integrity of the fruit. After gentle pressing, fermentation takes place slowly in stainless steel tanks at controlled temperature, ensuring maximum olfactory purity. Ageing also takes place in steel, without the use of barrels, to protect the freshness and vibrancy of the Sauvignon Blanc. In the vineyard, the inverted espalier system is used, a training method that allows for optimal canopy management and perfect vegetative balance, concentrating all the intensity of the aromas in the bunches.
