| Wine making | The wines are 50% reserve wines. In the vineyard, 'reasoned' agriculture that respects the environment is practised. In the cellar, the wines undergo their first alcoholic fermentation in temperature-controlled steel tanks, followed by malolactic fermentation with a view to blending with reserve wines from the previous two vintages. The second fermentation is then started in the bottle where the wine rests on the lees for 36 months. Natural manure is used in the vineyard as fertiliser; only copper and sulphur are used as pesticides. |
