Description

From a grape spread from Tuscany to Provence, Sardinia and Corsica, a typically Ligurian wine. On a white background the Doria Castle in green like the reflections of the wine, underlined by a white line stylising the 'donkeyback' bridge. Postcard from Dolceacqua.

The areas under cultivation belonging to members of the Maixei cooperative are situated along the Nervia and Crosia valleys in the province of Imperia in the Italian Riviera. Grape growing and winemaking in Liguria are activities undertaken mainly by people with small plots of land which are often divided due to the nature of the terrain.

The wineries that form part of the cooperative - the ‘Cooperativa Riviera dei Fiori’ – are located in areas of the municipalities of Apricale, Baiardo, Camporosso, Castelvittorio, Dolceacqua, Isolabona, Perinaldo, Pigna, Rocchetta Nervina, S.Biagio della Cima, Soldano and several zones in the municipalities of Vallecrosia, Ventimiglia and Vallebona. In order to become more productive and competitive, the wineries of Rossese di Dolceacqua joined to form a cooperative in 1978. Read more

Harvest The grapes, harvested by hand, are delivered by the members in the hours immediately following the harvest and are pressed extremely softly so as not to spoil the skin.
Wine making Part of the grapes, before the classic white vinification, are macerated with carbonic snow for a few hours to accentuate the character and typicality. Fermentation takes place at a controlled temperature (16 8°C) in stainless steel tanks and is carried out by selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the product.
Aging After a short ageing period in stainless steel, the wine is bottled in the spring following the harvest.
