Kettmeir's Alto Adige Pinot Nero DOC is a still red wine that, thanks to ageing in wooden barrels, accurately interprets the character of the grape variety. Its ruby-red hue introduces an elegant bouquet of red fruits. On the palate, it is soft and inviting, supported by a medium structure and a balanced tannic texture, closing with a fine and lingering finish. Highly versatile at the table, it is at its best when paired with speck-based first courses, red meats, pork, and medium-aged cheeses, and is best enjoyed when served in a large tulip-shaped glass.
Provenance
The Pinot Nero grapes come from the hilly area of Caldaro, in the province of Bolzano. The vineyards are situated at an altitude of between 450 and 600 metres, grown on trellises using Guyot pruning. The terroir is distinguished by limestone-based soils, which are loose and rich in stones and organic matter. This specific soil composition, combined with the hilly microclimate, ensures ideal conditions for the development of the vines. These environmental factors are reflected in the glass, supporting a clear aromatic definition and a naturally silky tannic texture.
How it is produced
After the harvest, which takes place between mid and late September, red wine vinification is carried out through meticulous maceration on the skins. Fermentation begins at controlled temperatures and then increases progressively, ensuring correct colour extraction and tannin stabilisation. Subsequently, the wine matures in wooden barrels for a period of four to six months. This targeted ageing accompanies the natural evolution of the wine, allowing the centrality of the fruit to remain the undisputed protagonist of the tasting experience.
