Description
Still organic rosé from Burgundy, Marsannay AOC, 14% ABV, produced by Jean Fournier. Vintage 2023. A rosé that expresses the finesse of Pinot Noir, with meticulous vinification that enhances its freshness and aromas. The grapes are hand-harvested in small 15-kg crates, followed by rigorous sorting in the cellar. The grapes are destemmed, then macerated overnight before being pressed without any additives (no sulfur or enzymes). The juices are lightly cold-decanted, then fermented in barriques using indigenous yeasts. Aged in 600-liter barrels (demi-muid, without new wood) for 12 months, then 5 months in stainless steel tanks. A wine distinguished by its elegance and versatility, perfect for pairing with aperitifs and light dishes.
It was much later, in 1962, that Jean Fournier settled as a winegrower in his native village. Today, his son, Laurent, is at the head of an exploitation which covers 22,5 hectares on the vineyards of the Côte de Nuits and the Côte de Beaune. Read more
