Educato by Elio Grasso is a Piedmontese white wine produced exclusively with Chardonnay grapes. Set within the Langhe region, it appears in the glass with a bright straw-yellow colour. The bouquet is sharp and linear, characterised by hints of white fruit, citrus notes, and delicate herbaceous nuances. On the palate, it offers a balanced sip, where the pronounced freshness and vibrant minerality blend into a soft and enveloping structural texture.
Where it comes from
This wine originates in Monforte d’Alba, from a single hectare of vines with an average age of about forty-five years. The vines, with south-east and east exposure, grow between 400 and 450 metres above sea level on medium-textured soil with a limestone-sandy matrix, which gives the sip a distinctive savoury character. The training system ensures optimal ripening of the bunches, fully enhancing the grape's varietal profile.
How it is produced
Manual harvesting takes place in the first ten days of September to ensure a rigorous selection of the raw material. In the cellar, vinification and ageing take place in steel tanks and French oak barrels, a choice aimed at balancing gustatory tension with a pleasant roundness. Resting continues until bottling, ensuring a balance that guarantees remarkable palatal cleanliness and makes it ideal for accompanying dishes with a delicate profile.

In the early 1980s we decided to go back to our origins as grape growers, well aware that our work did not stop at the end of the row of vines. We had no illusions that we were inventing anything: we merely wanted to comply with the best in the traditions and work of our predecessors, without any preconceived ideas. The first logical consequence was the decision, from 1978, to vinify and bottle separately grapes from our various vineyards. Read more
