Description
What kind of wine it is
Carricante Versante Est by Eduardo Torres Acosta is a still white wine with a straw yellow colour. On the nose, it opens with fruity aromas, herbal notes and deep mineral hints that recall the volcanic origin of the soils. On the palate, it is taut and linear, characterised by a vibrant savouriness that makes it ideal for accompanying fish dishes, sushi and shellfish, as well as perfectly balancing a rich seafood fry. The savoury notes also pair elegantly with soft cheeses.
Where it comes from
This wine is produced in Sicily, on the volcanic slopes of Mount Etna. Belonging to the Terre Siciliane area, it is a clear expression of the lava terroir. The grapes come from vineyards located on the eastern slope, an exposure that ensures constant thermal freshness and gives a dynamic character to the sip. Eduardo Torres Acosta carefully cultivates these plots, completing the production process in the village of Passopisciaro, a historic centre of Etna viticulture.
How it is produced
The vinification enhances the Carricante grape variety, processed to preserve the integrity and purity of the fruit. The interventions in the cellar aim for rigorous aromatic cleanliness, precisely defining the mineral imprint of the territory. The result is an essential sip, highlighting an intense gustatory freshness and the natural tension of the wine. Every stage of production is aimed at the utmost respect for the identity of the variety.

In 2012, he participated in the grape harvest at Arianna Occhipinti's, and a year later he worked as an oenologist at the Passopisciaro winery, attracted by the volcanic territory. In 2014, he began his work to restore the leased vineyards on Etna's northern slope. In the same year he bottled his first vintage.
Today we work 4.7 ha divided into 9 vineyards at different heights and districts. We continue to recover old vineyards that are 90% cultivated with the traditional alberello system. Today the company believes in the importance of continuous comparison and sharing with other producers, in the knowledge of other territories and other varieties. This is how we try to interpret a territory and make it known within a glass. Read more
