What kind of wine it is

Edi Keber Collio Bianco Vino da Uve Autoctone is an organic white wine that faithfully expresses the essence of Collio. The result of an elegant blend of Friulano, Malvasia Bianca and Ribolla Gialla, it displays a straw yellow colour with greenish highlights. The bouquet reveals notes of yellow melon, pear, citrus fruits, white flowers and almond. On the palate, it offers a perfectly balanced silky texture, enriched by pronounced minerality and a persistent finish. Excellent served chilled, it elegantly accompanies soups, white meats and flavourful fish dishes.

Where it comes from

The grapes grow in Zegla, in the Cormòns area, with a southern exposure in the heart of Collio. The vines are trained using the Guyot system on the typical ponka, a stony soil composed of marl and friable sandstone. This particular geological formation challenges the vine, encouraging the growth of small berries, which are crucial for the minerality and body that characterise the sip. The Edi Keber winery interprets this hilly terroir with an organic approach, strictly limiting yields per hectare. The meticulous work in the vineyard enhances the native varieties, precisely reflecting the identity of this historic land.

How it is produced

The manual harvest takes place when the grapes have reached their peak ripeness. In the winery, whole bunch pressing is carried out. The must ferments in concrete vats, a material that imparts character and depth to the sensory profile. Maturation lasts about five months: part of the blend is aged in barrels, while the remainder rests in concrete to preserve the varietal integrity. To ensure absolute expressive fidelity, the production process is completed without filtration.

Situated just a stone’s throw away from the Slovenian border, Edi Keber’s 12 hectares of vineyards grow on the classic "ponka" soil, a stony, friable marl that gives the wines remarkable weight and body. Extremely poor, the "ponka" naturally stresses the vines which produce very small quantities of grapes (1 to 1.5 kg x vine) and provide a distinctive minerality, typical of the Collio region.

Keber's first bottled wines date back to 1957, although his family, originally from Vienna, has made wine for 350 years. Edi deeply believes in the unique character of the Collio terroir and his objective is to make, starting with the 2008 vintage, only one white wine that will embody the tradition of the Collio by blending the three varieties that have been grown in the area since before the two great wars: Friulano, providing for body and structure, Malvasia Istriana to impart the aromatic component and Ribolla Gialla for its acidity.

Edi’s young son, Kristian, follows his father’s maverick footsteps helping in every aspect of the production. The grapes are picked at their highest possible maturity levels and are then fermented and matured in old cement vats, which according to Edi, add an element of "soul" to the wine as opposed to the sterility of stainless steel.
